Cuando el arroz empiece a quedarse con poco agua, tapamos la olla, bajamos el fuego y dejamos hacer hasta que esté seco. Retiramos del fuego, quitamos el ajo y dejamos enfriar.
- En un cuenco batimos el huevo con el chorrito de nata líquida. Añadimos la carne picada, el perejil, el ajo y el cilantro picados, la sal, nuestra guarnición de arroz y un poco de pan rallado. Mezclamos con las manos hasta hacer una pasta consistente pero manejable y dejamos enfriar 1 hora.
- A continuación, hacemos las albóndigas y pasamos por harina de maíz. Freímos en aceite de oliva hasta que cojan color y retiramos.
- En la misma olla, añadimos la cebolla y zanahoria picadas finamente. Pochamos e incorporamos el tomate frito, el azafrán y el brandy. Dejamos hacer hasta que evapore el alcohol, ajustamos de sal, e invorporamos las albóndigas y guisamos por 5-6 minutos a fuego medio.
